The option for rewriting the database can be found in the housekeeping section only, but before doing rewrite book its recommended to take latest data back-up to run this process.
When you open multiple account creation or modification tab there already a opening balance column. If not showing the you can add that field by click on select field button.

After Delete voucher number if you have deleted it ,please follow steps :
Step 1: Take a backup of data.
Step 2: Run Re-indexed database from House keeping menu.
